The menu can be hidden or auto-hidden (like in Slack or VS Code - you can press Alt to show/hide the menu). I had ben looking for an accessible app that would allow me to monitor information about my system such as fan speed, temperature, CPU load, etc. I had tried several times to request the developer of iStat Menus consider accessibility without any success. I learned about MenuBar Stats, https://seense.com/menubarstats from listening to the Mac Geek Gab podcast, http://www.macobserver.com/tmo/features/mac_geek_gab/.
I downloaded the trial of MenuBar Stats and found it was not accessible. I reached out to Fabrice, the developer of MenuBar Stats and within hours he had made the app pretty accessible. He has created a version that is compatible with Voiceover, https://seense.com/menubarstats/voiceover/ and the plan is to merge the VOiceOver accessibility changes with the next major release of MenuBar Stats. Please be aware the accessible version is not in the App store yet. Fabrice also plans to make accessibility enhancements to his other apps.
I really like MenuBar Stats and it provides all the information I was lookng for.

Get instant information about the health of your Mac, by looking at your menu bar or Notification Center. All modules can be added to your menu bar. While in combined window mode, all the module icons are embedded in 1 master item. To rearrange them simply order your items with [shift] Drag & Drop. While in separated mode, you can rearrange your items with [cmd] Drag & Drop. If you use the Dock mode, you can access your modules directly from the Dock.

Window Modes

Separated Window Mode

Look at each module individually in separated window mode, or combined. You can look at all your modules in separated window mode simultaneously! While in separated window mode, you get generally more detailed information.

Combined Window Mode

If you prefer, you can combine all the modules in 1 window, and simply rearrange the order by Drag & Drop. There is no limit for the number of modules. If there is need for space more than your screen, then the window will automatically activate the scroll view mode!
